This is the type of dish I have found that people love to return to time and again. There was once a whole stretch of ihawan, or food vendors, that grilled food in Las Pinas. It was located right next to Zapote. If I remember correctly, there were over 20 stalls along that stretch. You could probably see how Filipinos love their grilled food from the sheer number of stalls.
To satisfy my hunger, I used to eat skewered chicken barbecue almost every week. The chicken breast, or “pecho”, was my favorite part. You’d love chicken breast if you are like me and you know it’s better to choose it than any other part. You can cook it at home and have your favourite part of the chicken.
Today, I can make my Filipino-style chicken barbecue at home. Before we start making our own, let’s learn more about this grilled classic.
A little background about barbecue in the Philippines.
There are many ways to cook meat these days. We have many ways to make food more delicious and original, including stir-frying, boiling, and grilling. Cooks used to have to be creative in order to create some of the modern cooking techniques.
It is believed that the barbecue method originated from slow-cooking food on top a wooden platform. This was documented in a Spanish journal entry. It described how Taino Indians, who are members of the Caribbean Indian tribe of Taino, would cook their food on top of large pots placed in pits. This pot was meant to capture juice, which would then become broth. They would then cover the pit with leaves and hot coal.
When translated into English, they called the pit “babacoa” or “sacred flame pit”.
This slowly evolved into the barbecuing tradition we now know! We are aware, however, that the rules may vary from one country to another. The Philippines uses charcoal to grill food. This is not complete without the right sauce or marinade to bast your meat. It is different for every type of meat.
The most common Filipino barbecue sauce is made up of tomato ketchup and soy sauce. To make my Chicken barbecue marinade even more flavorful, I added a few additional seasonings. Here’s a peek at my recipe. Continue reading to learn how to make the Filipino Chicken Barbecue.
Let’s make Chicken Barbecue.
In a bowl, combine 1/2 cup soy sauce, 1 lemon juice, 1/2 cup banana ketchup, 2 tablespoons of salt and 1 teaspoon ground black pepper. These ingredients create a unique sweet, savory, and tangy flavor that is perfect for chicken. Mix them together well to ensure that everything is evenly distributed.
Take your four pieces of chicken leg quarters cleaned and placed in a large freezer bag. Take your bowl and mix the marinade. Add the chicken to the bag. By shaking the bag gently, we will ensure that each piece is coated with the marinade. After you have sealed the bag, remove all air from it. You can now place this in the fridge to let it marinate for a good night of sleep.
How to prepare your chicken for grilling:
Once the chicken has marinated overnight, it is time to take the bag from the fridge. Next, take out the chicken pieces and then pour the marinade into a bowl. Heat your grill to medium heat.
After the chicken legs are seasoned, place them on the grill. Grill the chicken for 12-15 minutes or until it is fully cooked on medium heat. It can take a while to cook your chicken so you need to keep it at medium heat. The chicken’s exterior will cook faster if you heat it up. Either a raw chicken on the inside or a cooked chicken with a crispy exterior could result. It’s crucial to grill the chicken on medium heat.
You can also continue to baste the chicken while grilling with the rest of your marinade. This will keep your chicken juicy and delicious. Once your chicken is cooked to your liking, remove it from the grill and place it on a serving platter. It is best to eat this with some delicious steamed Rice!
You don’t have to finish everything you make at once. Here are some tips to ensure that your barbecue is still good for you to eat.
Tips for storing chicken barbecue
The best way to store your dish would depend on the time it will be needed. You have the option to refrigerate it if you need it to last for at least 3-4 days. Make sure your barbecue is at room temperature. You can then grab a container that isn’t too deep. This will help to keep the meat cool faster and prevent any bacteria from growing.
Freezing your Chicken Barbecue is another way to save it for later use. This can be done by freezing leftover barbecue in an airtight container. Place the Chicken Barbecue in the container and place it in the freezer. This is as simple as refrigerating. If you only need the barbecue to last 3 months, this is the best option. However, if you wish to preserve it for longer periods of time, vacuum sealing it can be a good alternative. It can be stored in the freezer for up to 2 years without going bad.
It’s important to check everything if you freeze food. You should inspect all food that you have stored to ensure that it isn’t beginning to rot.

- Four pieces of chicken leg quarters cleaned
- 1/2 cup soy sauce
- 1 piece lemon, 4 pieces calamansi
- 2 teaspoons salt
- 1 teaspoon ground black pepper
- 1/2 cup banana ketchup
- In a bowl, combine the soy sauce with the juice of 1 lemon, bananaketchup, salt and ground black pepper. Mix well.
- Place the quartered chicken legs in a large freezer bag and then add the marinade.
- To coat the chicken in marinade, shake the bag gently and then empty the air from the bag. The bag should be sealed and kept in the refrigerator overnight.
- Take the chicken out of the bag. Transfer the marinade to a bowl.
- Grill the chicken on medium heat. Continue grilling for 12-15 minutes or until it is fully cooked. Make sure to brush the chicken with any remaining marinade.
- Notice: Chicken takes a while to cook. The chicken will cook faster if it is grilled on high heat.
- Transfer the meat to a plate.
- Serve with steamed rice
