How to make apple pie and baked oatmeal
In a large bowl, combine the dry ingredients (oats and cinnamon, nutmeg. baking powder, salt) in a large bowl. Mix the eggs, almond milk and vanilla in a separate bowl.
Mix the wet ingredients with the dry ingredients until well combined. Then, add the pecans and chopped apple to the dry ingredients.
Place the mixture in a 8×8 baking pan and press down gently to make sure all the oats are soaked. If desired, top with additional pecans or apples.
Bake at 375F for between 40 and 45 minutes. Let cool 5 minutes before serving.
You can keep leftovers in the refrigerator for up to five business days. You can wrap leftovers in aluminum foil and store them in an airtight container in your freezer.

Once the baked oatmeal has cooled, I slice it up and freeze individual portions. This allows me to grab a quick square of baked oatmeal in the morning, and then reheat it.
The best way to microwave-cook baked oatmeal is to add a little almond milk or your favorite milk to the oatmeal. Or reheating in an oven. This will prevent the oatmeal from drying out.

- 2 cups Rolled Oats (certified gluten ten, if needed)
- 1 tsp. Baking powder
- 1 tsp. Cinnamon
- 1/2 tsp nutmeg
- 1/4 tsp. salt
- 1 3/4 cup almond milk or non-dairy milk
- 2 eggs
- 1/3 cup pure maple syrup
- 2 teaspoons pure Vanilla Extract
- 2 medium apples, diced small
- 1/2 cup chopped Pecans (or another nut)
- Pre-heat oven to 375F. Grease an 8×8 casserole dish. Adjust the cooking time if you use a different size.
- Mix together the rolled oatmeal, baking powder and cinnamon in a large bowl. Add the salt.
- Mix the almond milk, eggs and maple syrup in a large bowl.
- Mix the wet and dry ingredients together. Stir until well combined
- You can also add pecans and apples.
- Mixture in a baking dish. Press down gently to ensure that oats are well soaked. If desired, add a few more pecans or apple pieces.
- Bake covered for approximately 40-45 minutes until light golden brown.
- Allow to cool, then let it cool again before you serve.
- Keep in the refrigerator
